Recipes: Mexican Sweet Pancakes, Chicken/Quorn Fajitas, Guacamole, Salsa and Mexican Sprinkle Cookies

This Summer holiday week we have the 11 yrs and over, longer cookery session.
We will be making Mexican sweet pancakes for our snack in the morning. Then we will be making Chicken / Quorn Fajitas from scratch. Starting with homemade dough to make the tortilla wraps, cooking chicken and peppers, and creating a Fajita sauce that can be as spicy or mild as the children want. To go with the Fajitas they will also make salsa and guacamole and have this for their lunch…delicious!
We will be eating it here in our dining room. For a sweet treat we will be making Mexican sprinkle biscuits. They will take the biscuits home so please bring along tupperware.
Important stuff:
All children are dropped off and left with us for the duration of the class. There is a parental consent form to fill in when booking your child onto the class. Please let us know if they have any specific food requirements, health or educational needs so we can offer the best possible experience for them. Our holiday clubs are a fun and safe environment with up to 16 children attending, they are noisy and busy.
